Paleo chocolate cupcake or muffin recipe~
My favorite thing to make with the kids that the entire family can enjoy is Paleo chocolate cupcakes! Everyone loves them and they will magically disappear as I pull them out of the oven! I usually double or triple the recipe. My four year old son Cole loves to pour the ingredients in!
1/2 cup coconut flour
1/2 cup chocolate powder or cacao
1/2 teaspoon sea salt
1/2 teaspoon baking soda
8 large eggs
1/2 cup of coconut oil
2/3 cup of raw honey
1 teaspoon vanilla extract
Preheat oven to 350 degrees f. Line muffin pans with paper liners. Mix dry ingredients together in a large bowl. Melt coconut oil and honey in a sauce pan on the stove until melted. I like to put it on low while I am mixing the other ingredients. Mix eggs and vanilla in a bowl and beat well. Slowly add the honey and coconut oil mixture to the egg mixture. Once the wet ingredients are mixed, slowly add them to the dry ingredients while beating with a mixer. Pour batter into lined muffin tins. Bake for 16-25 minutes or until a toothpick comes out dry.
I like to make coconut whipped cream like this one here and add bananas or raspberries. I also like to eat mine plain Jane. You’re welcome!
